It feels good to feel good this early in the week. Maybe its the warm weather, maybe its the changes I am finally seeing, maybe its my vacation in 18 days. What ever it is I hope it's here to stay.
New Moves at HIIT This Week
* Plank Jacks
* Standing sit up with a weight (using the benches).
Start laying up the bench with a weight- crunch up, stand up, squat, sit, crunch and repeat!
* Push ups with opposite arm and leg lift
* Squat hold
Monday nights awesome dinner.
I tried something new- Jicama! Thatcher brought this back from the co-op and I stared at it for at least five minutes afraid to touch it. It looks like a glazed donut (it was super sticky). It did not taste like a glazed donut
- so mean- According to Wikipedia its a Mexican yam/turnip.
I peeled it and sliced it up thin on the mandolin with an apple, carrots, and a citrus vinaigrette to make a jicama-apple slaw. I had no idea what to do with this thing and a slaw is the only way I have seen jicama used (chopped anyone?) so I went with it. The slaw turned this basically unedible thing into something that was okay. Not great not bad, but paired with the apple it was okay. And the rest is probably in the garbage by now.
I used a beautiful filet of frozen Shad (locally harvested from the Connecticut River) to make some fish tacos. I added a little bit of butter, salt and pepper, green pepper, onions, garlic, and cilantro, wrapped it up in tin foil and baked it at 400 degrees for about 20 minutes.
I sliced some potatoes and yams on my new mandolin and roasted those in the oven for about 35 minutes with some olive oil salt pepper and what ever spices I could find.
Finished product? Beautiful fish tacos, a side of potatoes, and an apple jicama carrot slaw.
After dinner Monday night I was feeling super motivated so I decided to do some more packing, cleaning, and finally tackle a few laundry baskets full of unfolded clean clothes. I should do this more often because I was rewarded with a bottle of wine at the bottom of the basket. No idea how it got there but I hate cleaning and love wine so these two activities canceled each other out for a mediocre cleaning sesh.
Tuesday morning I woke up at 6:15 for a 6:30 run with the pooch. I knew she would be home alone all day while I was at an important meeting for work so we put in five miles- hoping this would wear her out and leave my home un-destroyed for the day. It was a very slow five miler thanks to my HIIT class last night but the dog didn't judge. She jumped right back in bed when we got home so I am calling this mission a successful one.
After my run I took a quick shower and put together a five mile fueling breakfast. I grabbed the fresh loaf of bread, two eggs, half an avocado, 1 small tomato and cilantro (all from the co-op) and turned all of this....
Into this! I gave Thatcher half of my breakfast because he bought the groceries and sharing is caring, especially when it comes to sharing calories. I am so in love with the food co op, my panini press, and my zebra plates.
I was super excited to grab a springy fun outfit for today's meeting. mint green skinny jeans from Marshalls, flats from Payless, Blazer from Banana Republic, a white layering tank top from Gap, and a striped shirt stolen from my sisters closet while dog sitting.
I hope everyones enjoy their week and planning some great workouts for this week. I am trying to incorporate some different types of training/ workouts to keep my body guessing and burning calories like the calorie burning machine it is(n't).
I am really excited to try out a new app Sworkit that I found on Breaking Free and Finding Me. It tells you what strength moves to do and how to do them so you don't look super awkard at the gym and you can fool everyone into thinking you know exactly what your doing you gym rat you....
