Pioneer woman's recipe for perfect salmon

I love seafood. If it came out of the ocean, I love it. Lobster, mussels, oysters, crab fish, sushi, I love it all and then some.

I love to cook salmon but I have never perfected the recipe for flaky moist perfect salmon (until now!) I got this recipe from Ree Drummond of the Pioneer Woman- one of my favorite cooking show and blogs.

Most of the salmon I have eaten/made is too underdone or dried out and bland. But not tonight ! Tonight's salmon was moist flaky juicy flavorful and so so simple to make.

Put your salmon on a foil lined baking sheet. Drizzle with olive oil salt and pepper. Put the salmon in a cold oven turn onto 400 degrees and set the timer for 25 minutes. After 25 minutes you will have perfect flaky delicious salmon.

  1. Can you cook this with frozen salmon? Or do I need to thaw them first? The ones I have are smaller salmon.

    1. I would let it thaw I would say to 80%! Fully frozen and you might still have raw salmon in the middle. But because they are smaller, I would let them mostly thaw and then do the same procedure :) The extra moisture of the frozen fish may throw it off a little bit but please let me know how yours turns out and I will modify for frozen fish!

  2. Do you start the 25 minutes after the oven hit 400 or right when you put the salmon in?

    1. Hi Aijai! You set the timer right when you set it in the cold oven :)

      I love this recipe because not only is it perfect every time.. but easy! no waiting for the oven to hit temperature!

    3. Great Question! Ree over at Pioneer Woman did not say but I put it on the bottom and it turned out great! I am sure you could do the middle of the oven as well. Let me know how yours turns out!

  4. I just made this recipe, it came out perfectly! I put the fish on the bottom rack and roasted veggies on the upper rack.

  5. Just made this for dinner. It was a huge hit! Even my picky daughter went back for seconds. The only change I made was to add lemon pepper seasoning instead of the salt and pepper suggested. Followed the cook time to the letter. It came out perfect. Thanks for sharing :)

  12. I am over the moon with the way this salmon turned out! I used Garlic Salt and Pepper and I followed the timer exactly. I live at 8,900' elevation and I seriously had my doubts if it would turn out as good as everyone was claiming. Lo and behold, it was perfect and delicious. Thanks for sharing this. It was THE easiest recipe I ever used with such wonderful results!

  14. Super EASY! I bought Salmon at Costco, cut it in three pieces. Followed your directions and it turned out wonderful! I was a little skeptical about the timing, since the pieces were big, but it was perfect! My top rack was sort of in the middle, not real high if that helps any =) THANKS for the recipe!

    1. So easy and perfect every time! That was smart to cut it into smaller pieces. I am always skeptical of the timing too but it always works out! Middle rack is definitely the best option for heat circulation. Glad you enjoyed it!

  15. Mine is in the oven as we speak. I didn't cut it into pieces. I like the presentation of a large piece. I am not a big fan of salmon but needing to add some variety to our menu and paleo eating plan. It's on the middle rack, can't wait to try it!

  16. I made this tonight and the salmon was not done in the 25 minutes. I think my filets looks about the same size as yours but they do have skin on the bottom. Could that be the difference?

    1. I am sorry to hear that! I have done this a million times, skin on skin off even different sizes. Maybe its just a different in ovens? How long yours took to get to temperature? Maybe try 30 minutes next time :)

  18. This was way too long to cook salmon - ruined a lovely piece of expensive Copper River salmon. Should have checked it earlier, will try again but for 15 minutes to 20 minutes.

  19. Does it matter what sort of oven you're using? Electric? Gas?
    As a single person I often use a toaster oven, which I imagine would heat faster than either one...

    1. Hello! I do not think this would work in a toaster oven as the space is too small. This works so well in large ovens because the fish slowly comes to temperature and is not overcooked. I would not try this with a toaster oven. Sorry and hope you find a way!

    2. Thanks for the quick reply. I'm still curious though if you did this in a gas or electric oven, and with or without a fan. It seems to me that a gas oven heats faster than an electric one.

I did this in an electric oven :) I did some quick research "if you ask Chef Bruce Mattel, senior associate dean for culinary arts at the Culinary Institute of America. “Unless you’re looking at an electric oven with an exposed infrared coil, the two are pretty comparable,"

  21. I came upon this a little over a year ago and I LOVE it!!! We do this once a week and my kids love it too. It comes out perfect every single time!!! I also make rice and green beans with salt, lemon and some olive oil and the whole thing disappears lol
