If you are a faithful reader, you know I have been trying to work on my baking skills.
Or lack there of.
Or lack there of.
Flour, sugar, vanilla, chocolate chips, coconut flakes, nuts, I stocked up on some staples.
Looking at the coconut flakes and chocolate chips, I really wanted to use those suckers first.
I did some research to find a recipe and I found this piece of heaven.

Coconut chocolate chip blondie?!?
What a grand idea.
I was excited to find a recipe that I had all of the ingredients for.
Well, an easy recipe is nice too.
What you will need:
1 cup all-purpose flour
1/8 teaspoon salt
1 stick of unsalted butter- melted and cooled to room temp
1 cup light brown sugar
1 large egg
1 1/2 teaspoon vanilla extract
1 cup sweetened coconut flakes
1 cup of chocolate chips
Directions:
1. Preheat oven to 350 F
2. Spray an 8 inch baking pan with cooking spray.
(I used a cake pan)
3. Combine the flour and salt- whisk and set aside
4. Stir together the melted butter and brown sugar until smooth and creamy; beat in egg and vanilla extract until well blended.

5. Slowly beat in the flour and salt mixture until just blended. Next, stir in the coconut and chocolate chips. Scrape the batter into the pan. Make sure the batter is spread evenly, smooth with a spatula. Sprinkle coconut flakes on top.
6. Bake for 25-30 minutes or until set int he center but still soft. Do not overbake the bars. Let cool slightly before serving and cut the bars into squares.
Oh I really hope you go make these RIGHT NOW.
You will not be disappointed.
Gooey and warmed....
