Life Lately and Overnight Oats

Hey guys!  Sorry I was gone most of the week.  Blogger was being funky and wasn't letting me upload my pictures.  And lets be real, you don't want to hear me ramble with nothing to look at. 



First things first- I jumped on the steel cut/overnight oats train. 


Plain Overnight Oats Recipe
 Bring 4 cups of water to a bowl,  Next, add in 1 cup of steel cut oats, cover and boil for 1 minute.  Shut off the stove, keep covered, and let the oats sit out on the stove top overnight.  Tomorrow you will have fluffy yummy oats.

 

Add in your favorite toppings.  Some Ideas:
 Fruit, nuts, cinnamon, brown sugar, honey, nutella, coconut flakes, peanut butter, anything you fancy! . That's what I love about this.  I can make a batch for the week and personalize the flavor to what ever mood I am in that morning. 



Secondly, I have been trying to look nicer at work and wear some cute outfits.  I work alone most of the time and run during some lunch breaks and ride after work, so I tend to go the comfy athletic wear route.  Well this week I was much better-- I bought this wrap sweater for ten bucks and paired it with leggings and flats. 




Mondays body pump class was PACKED!  Like double the people I had never seen before.  I guess spring is in the air and bikini season is looming.  

I also got in a 3 mile run Wednesday and 3 mile run Friday.  Should have done a longer run but hey I ran two days mid week, I will take it. 




With the warm weather, pony riding is back in full swing.  Getting harder to squeeze in work, riding, running, cleaning, and cooking.  But atleast the weather is warming up :)




Or I could be a lazy bum like the cat and just sit around getting fatter.... sounds tempting. 




My go-to make ahead lunch for the week,  Egg frittata on some wilted spinach.  Super easy make ahead lunch that will last the entire week.  Healthy filling and delicious.
Another week down and a sunny beautiful weekend.

  1. overnight oats = NO cooking! you let them sit in the fridge overnight with milk and yogurt, and use regular oats (not steel cut). But whatever... provided you didn't get food poisoning, it looks interesting... lol... :)
